- Preheat oven to 350°F. Lightly coat a 3-quart rectangular baking dish with nonstick cooking spray. Set aside.
- In a large skillet heat oil over medium-high heat. Season chicken with salt and pepper to taste; add to skillet. Cook until lightly browned, turning once. Transfer to prepared baking dish.
- In a medium bowl stir together mushrooms, butter and 1/2 cup water. Add curry powder, peas and carrots, and salt and pepper to taste. Toss to combine. Pour mixture over chicken. Cover and bake 20 minutes or until chicken is no longer pink (165°F). Let stand 5 minutes before serving.
